GRILLED SQUID WITH CORIANDER PESTO

Ingredients
- 12 squids
- 65 ml of fresh lime juice
- 15 ml of olive oil
- 15 ml of finely chopped red bell pepper
- 15 ml of finely chopped capers
- 15 ml of finely chopped garlic
- 15 ml of fish sauce
- 10 ml of sugar
Preparation
- Mix all marinade ingredients well and let stand.
- Make diagonal cuts in the squid flesh to square both sides. Pour the marinade over the squid and marinate for 30 minutes.
- Preheat the grill to high and oil it.
- Remove squid from marinade and drain. Add salt and pepper to taste.
- Place on the grill and grill for two minutes on each side.
- Remove and place on a serving dish.
- Garnish with coriander pesto.
PESTO
- 250 ml of fresh coriander
- 20 ml of toasted pine nuts
- 20 ml of Reggiano Parmesan cheese
- 1 small peeled garlic clove
- 15 ml of fresh lime juice
- 20 ml of olive oil
Method
- Finely chopped all dry ingredients.
- Add lime and olive oil.
- Add salt and pepper to taste.
