ATLANTIC COD LOIN FISH & CHIPS

Ingredients
- 675 g of cod loin
- 60 ml of potato starch
- 430 ml of all-purpose flour
- 2.5 ml of salt
- 125 ml of water
- 341 ml of dark beer
- Salt, pepper
- Fleur de sel
Preparation
- In a large bowl, combine the cornstarch, 310 ml of flour and a pinch of salt. Add water and beer. Whisk until mixture is smooth. Set aside at room temperature.
- Cut cod loins in half lengthwise.
- Season cod loins with salt and pepper and dip in remaining flour; shake off excess.
- Then dip each piece into the batter and coat well. Drain slightly and place in deep fryer (375 F) and fry for about 4 minutes.
- Remove and let drain on a rack. Sprinkle with fleur de sel.
- Serve
