ATLANTIC COD LOIN FISH & CHIPS

Ingredients

  • 675 g of cod loin
  • 60 ml of potato starch
  • 430 ml of all-purpose flour
  • 2.5 ml of salt
  • 125 ml of water
  • 341 ml of dark beer
  • Salt, pepper
  • Fleur de sel

Preparation

  • In a large bowl, combine the cornstarch, 310 ml of flour and a pinch of salt. Add water and beer. Whisk until mixture is smooth. Set aside at room temperature.
  • Cut cod loins in half lengthwise.
  • Season cod loins with salt and pepper and dip in remaining flour; shake off excess.
  • Then dip each piece into the batter and coat well. Drain slightly and place in deep fryer (375 F) and fry for about 4 minutes.
  • Remove and let drain on a rack. Sprinkle with fleur de sel.
  • Serve
