PAN-FRIED WALLEYE FILLET AMANDINE

Ingredients
- 4 walleye fillets
- 15 ml of olive oil
- 75 ml of cold butter, cut into cubes
- 60 ml of slivered almonds, toasted
- 10 ml chopped capers
- 15 ml of chopped fresh chives
Preparation
- In a large skillet, brown fish on each side in oil and 15 ml of butter until desired doneness. Add salt and pepper to taste. Keep warm in a presentation plate.
- In the same pan, add the remaining butter and cook until it takes on a nutty color. Remove from heat quickly. Strain into a bowl and add remaining ingredients.
- Coat the fish with the hazelnut butter with almonds.
- Serve
