PAN-FRIED WALLEYE FILLET AMANDINE

Ingredients

  • 4 walleye fillets
  • 15 ml of olive oil
  • 75 ml of cold butter, cut into cubes
  • 60 ml of slivered almonds, toasted
  • 10 ml chopped capers
  • 15 ml of chopped fresh chives

Preparation

  • In a large skillet, brown fish on each side in oil and 15 ml of butter until desired doneness. Add salt and pepper to taste. Keep warm in a presentation plate.
  • In the same pan, add the remaining butter and cook until it takes on a nutty color. Remove from heat quickly. Strain into a bowl and add remaining ingredients.
  • Coat the fish with the hazelnut butter with almonds.
  • Serve
